When I first started the Ketogenic Diet, finding a suitable substitute for mashed potato was high on my priority list. Then, I discovered this recipe for Keto Cauliflower Mash, so I couldn’t wait to try it. I was not disappointed.
One of my favorite foods before going Keto was mashed potato. It was a real issue for me to give up. But, potatoes are loaded with carbs, and even if you’ve taken the time to wash as much of the starch out as possible, they still don’t fit well with any low-carb weight-loss plan.
Just one medium-sized potato contains up to 37g of carbs*. So, eating just one can put you over your daily carb limit.
Delicious & creamy, the perfect low-carb substitute Keto Cauliflower Mash fits perfectly as a side dish for any meat or soy-based meal. Add a few chopped spring onions and even those family members not doing a Keto diet will love them.
